Strangozzi (home made pasta) with truffle

truffle recipe, pasta with truffle, traditional umbria pasta. linguine with truffle

500 gr. strangozzi (it's a traditional umbria home-made pasta, you can use linguine too)
100 gr. extra virgin umbrian olive oil
100 gr. truffle washed
1 garlic clove
salt
chili pepper (if you like it!)

Warm some oil in a pan with garlic, and pepper if you want to use it. Cut the truffle in small pieces and add it into the pan. Cook the pasta al dente, drain and return to pan with sauce. Serve warm, with Parmigiano cheese if you like. We suggest not to add it beacause it could "cover" the truffle.
